 Bhature (Fried Bread):

  • 2 cups all-purpose flour (maida)
  • 1/2 cup yogurt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • Salt to taste
  • Cooking oil for deep frying

 Serving:

  • Sliced onions
  • Lemon wedges
  • Green chilies

Cooking Instructions

Chole (Chickpea Curry):

  1. Rinse and drain the soaked chickpeas. In a pressure cooker, cook the chickpeas with salt until they are soft and tender (usually around 3-4 whistles).
  2. Heat oil in a large pan. Add cumin seeds and asafoetida. Once the seeds splutter, add the chopped onions and sauté until they turn golden brown.
  3. Add ginger-garlic paste and cook for a few minutes until the raw smell disappears.
  4. Stir in the tomato puree and cook until the oil separates from the mixture.
  5. Add ground cumin, ground coriander, turmeric powder, red chili powder, and salt. Sauté for a couple of minutes.
  6. Add the cooked chickpeas along with some water. Simmer until the Chole is thick and well-cooked. Sprinkle garam masala and garnish with fresh coriander leaves.

Bhature (Fried Bread):

  1. In a mixing bowl, combine all-purpose flour, yogurt, baking powder, baking soda, and salt. Knead into a smooth, elastic dough. You may need to add water gradually to achieve the right consistency.
  2. Cover the dough with a damp cloth and let it rest for at least 2 hours.
  3. Divide the dough into small, equal-sized portions and roll them into balls.
  4. Heat oil in a deep pan for frying. Roll out each ball into a circle or oval shape and deep-fry them until they puff up and turn golden brown.
